Stores and supermarkets often display terms like “seasonal blend” and “house blend.” Additionally, we encounter terms like “French roast” and “dark roast.” However, the truth is that many roasters blend coffees from various origins, varieties, or qualities. This blending process erodes traceability and authenticity, making it difficult to identify the original flavor, notes, and aromas of the coffee beans. In many coffee-producing countries, coffee growers have limited trading options, often selling their crops to intermediaries or cooperatives where coffees are mixed and blended with others.

The roaster’s sole responsibility is to select, roast, pack, and deliver a single-origin coffee to consumers. This coffee originates from a single coffee grower, variety, and undergoes meticulous norms and processes that elevate its cup to exceptional quality, earning it the coveted title of Special Coffee or Specialty Colombian Coffee. In certain instances, it’s possible to guarantee a single-origin coffee from a specific region that encompasses multiple farms within that region. However, it’s important to note that even if a cup is exceptionally clean and free from defects, it may not always retain the same notes and maintain the same cup scores.

On the other hand, some roasters and coffee shops experiment with blends, combining their origin and unblended beans to enhance their notes and provide a distinct cup experience. For instance, they might take a Geisha coffee from a particular farm and add one or more varieties, specifying their respective percentages (Geisha 40%, Tabi 20%, Castillo 20%, Caturra 10%). This approach ensures that the new blend maintains the integrity and traceability necessary to deliver a consistent and enjoyable experience for the consumer.
